When it doubled its size, apply an egg wash and sprinkle cheese on top (included). If working with a proofer, program relative humidity to 60 and 90 o F. temp. For 25-30 minutes or until it doubles its size. Take out of the proofer and let dry for 2 mins. Apply an egg wash and sprinkle.
